Easy, healthy, oat cookies!

The perfect quick and healthy breakfast or snack for the whole family.



These are a fan favorite for the kids and this mama. You can form them into pretty much any shape, from hearts to letters to trains. Full disclosure, I don't usually measure these (we can barely get dressed and out the door let alone break out the measuring cups). Once you get a hang of the texture they should be, feel free to wing it!


Oat Cookies


Prep Time: 2 minutes

Cook Time: 5 minutes

Hangry Kids Time: 7 minutes


Ingredients

  • 2 eggs

  • 1/2 cup quick oats

  • 3 tablespoons ground flaxseeds

  • 1/4 cup coconut flour

  • 1 tablespoon pure vanilla extract

  • 2 tablespoons honey

  • ¼ cup mini chocolate chips (optional)

Directions

  1. Preheat oven to 350 degrees

  2. In a medium bowl, whisk eggs with a fork

  3. Stir in oats, flaxseeds, coconut flour, vanilla and honey

  4. Add mini chocolate chips (optional)

  5. Form cookies into balls (or any fun shape you like) on a piece of parchment paper

  6. Bake for 5 minutes
